Step 1
Peel and dice 2 mangoes. Blend until smooth.
Transfer the mango puree to a saucepan. Sprinkle the gelatin over 2 tablespoons cold water and let stand for 1 minute. Add to the mango puree and cook over medium heat, stirring, until the mixture is hot and the gelatin has dissolved. Do not boil. Remove from heat.
Step 2
In a large bowl, whisk the egg yolks and sugar until pale and thick.
Slowly whisk the warm mango mixture into the egg mixture until smooth. Refrigerate for 30 minutes, stirring occasionally, until cooled but not set.
Step 3
Whip the heavy cream until stiff peaks form. Fold in the mascarpone.
Gently fold the cooled mango mixture into the cream mixture until combined.
Dice 1 additional mango and set aside.
Step 4
In a shallow bowl, combine the mango nectar and rum.
Quickly dip half of the ladyfingers into the mango-rum mixture and arrange in a single layer in a 3-quart serving dish.
Spread half of the mango cream over the ladyfingers and top with the diced mango.
Repeat with the remaining dipped ladyfingers and mango cream.
Cover and refrigerate for at least 6 hours, preferably overnight.
Step 5
For the syrup, combine the sugar, mango nectar, and rum in a small saucepan.
Bring to a simmer and cook for 3 to 4 minutes until slightly thickened. Cool completely.
Step 6
Slice the remaining mango.
Drizzle a little syrup over the Mangomisu, top with fresh mango slices, and serve with the remaining syrup on the side.
