Ingredients

Brûléed Mango
  • 4 Calypso® Mangoes
  • ⅔ cup granulated sugar
Passion Fruit Cream
  • 1¼ cups heavy whipping cream
  • ¼ cup sour cream
  • 1 tsp vanilla bean paste or vanilla extract
  • Pulp from 2 passion fruits

Tips

Best to cook in batches so the pan stays hot and mango doesn’t stew.

You can also cook mangoes on a flat plate of a barbecue if you prefer. They are delicious served with coconut ice-cream.

Method

Step 1

Make the passion fruit cream by whipping the heavy cream, sour cream, and vanilla together until soft peaks form. Fold in the passion fruit pulp. Cover and refrigerate until ready to serve.

Step 2

Slice the mangoes in half and remove the pits. Score the flesh in a crosshatch pattern without cutting through the skin. Place the sugar on a plate.

Step 3

Heat a large nonstick skillet over high heat.

Press the cut side of each mango half into the sugar to coat. Working in batches, place the mango halves cut-side down in the hot skillet and cook for 3 to 4 minutes, or until the sugar caramelizes and forms a golden crust.

Transfer to a serving platter and repeat with the remaining mango halves.

Step 4

Serve the warm brûléed mangoes with a generous spoonful of passion fruit cream.
