Ingredients

  • 2 Calypso® Mangoes, peeled and diced
  • ½ cup plain Greek yogurt
  • ½ cup unsweetened coconut milk or almond milk
  • 2 large eggs
  • 2 egg yolks
  • 2 tsp vanilla bean paste or vanilla extract
  • ⅓ cup sliced alm
  • 1½ cups old-fashioned rolled oats
  • 1 tbsp chia seeds
  • 2 tsp baking powder
  • 2 tbsp unsalted butter, melted

Tips

The baked pancake can be refrigerated in an airtight container for up to 3 days or frozen for up to 1 month. Reheat in the microwave, oven, toaster oven, or skillet.

Method

Step 1

Place a 10-inch cast iron skillet in the oven. Preheat the oven and skillet to 350°F (175°C).

Step 2

Reserve about one-third of the diced mango for topping. Add the remaining mango, Greek yogurt, coconut or almond milk, eggs, egg yolks, and vanilla to a blender. Blend until smooth.

Step 3

Reserve 1 tablespoon of the sliced almonds. Add the remaining almonds, oats, chia seeds, and baking powder to the blender. Blend until smooth. Let the batter rest for 3 minutes to thicken slightly.

Step 4

Carefully remove the hot skillet from the oven. Add the melted butter and swirl to coat the bottom and sides.

Pour the batter into the skillet. Scatter the reserved mango over the top and sprinkle with the reserved almonds.

Bake for 18 to 20 minutes, or until the center is set and a toothpick inserted in the middle comes out clean.

For additional color, broil for 1 to 2 minutes at the end of baking. Let stand for 10 minutes before serving.

Step 5

Slice into wedges and serve topped with cottage cheese, extra fresh mango, and a drizzle of honey, if desired.
