Ingredients

  • 4 Calypso® Mangoes, peeled and diced
  • 1½ tbsp fresh lemon juice or lime juice
  • 2 tbsp granulated sugar

Tips

If any areas remain sticky after cooling, return the strips to the oven at 175°F for an additional 15 to 30 minutes to continue drying.

Silicone baking mats work especially well for fruit leather and can be reused many times.

 

Method

Step 1

Preheat the oven to 175°F (80°C).

Line two large rimmed baking sheets (approximately 11 x 17 inches) with silicone baking mats or parchment paper lightly coated with cooking spray.

Step 2

Place the mango, lemon juice, and sugar in a blender or food processor. Blend until completely smooth.

Divide the mixture evenly between the prepared baking sheets. Spread into an even layer about ⅛ inch (3mm) thick.

Bake for 3½ to 4 hours, or until the center is slightly tacky but no longer wet to the touch. The edges should peel away easily from the parchment or silicone mat.

Remove from the oven and allow to cool completely, about 1 hour.

Step 3

Place a sheet of parchment paper over the fruit leather and carefully flip it onto a work surface. Peel away the baking mat or bottom layer of parchment.

Using kitchen scissors or a pizza cutter, cut into strips approximately 2½ inches wide. Roll each strip tightly and secure with kitchen twine or store as-is.

Store in an airtight container in the refrigerator for up to 6 weeks.
