Hedgehog Calypso®

The “hedgehog” is the easiest way to get juicy mango cubes — perfect for snacking, tossing into salads, or blending into your go-to smoothie.

Step 1

Stand your Calypso® Mango on its beak end, with the stem facing up toward you. The flat seed runs lengthwise inside, so you’ll want to cut along the widest part.

Step 2

Slice just to the side of the stem, cutting straight down from top to bottom. Your knife should glide past the seed — that’s one cheek done. Repeat on the other side.

Step 3

Hold the mango cheek in your hands and push gently on the skin side so it pops inside-out — the cubes will rise like a hedgehog’s back. Scoop and enjoy!
